Good Afternoon Again!
It has been another busy but productive day. The highlight of the day was going to the Hot Power Fusion yoga class at Balance Yoga. I had another day of running + Hot Power Fusion detoxing and I love the way I am feeling right now. I was literally soaked in sweat again and my shower today felt extra good. The Hot Power Fusion class is challenging and cleansing and something that I want to incorporate into my workout regime full time.
I made a fabulous spring time salad that I have been munching on the last few days for dinner. It is a fresh Asparagus, Tomato and Feta Quinoa Salad and it is amazing.
Asparagus, Tomato and Feta Quinoa Salad
1/2 cup red quinoa, cooked
1/2 cup quinoa, cooked
1 bunch asparagus, steamed
1 pint yellow and red grape tomatoes
1/2 cup red onion, thinly sliced onions
1/2 cup feta cheese, crumbled
2 tbsp dijon mustard
2 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
Cook quinoa according to package. Combine cooked quinoa, asparagus, tomatoes and onions. Dress with dijon mustard, balsamic and olive oil. Top with feta cheese. Enjoy warm or cold.
This is a super salad loaded with all sorts of goodies and I enjoyed it warm one night and tonight I had it cold topped with a cooked egg for added protein.
I received a fun package in the mail from All-Bran with three different kinds of cereal to try and guess what I have already tried all three in the last two days! I love cereal and have really enjoyed the All-Bran in all of its forms.
I will mention that I was a little disappointed to see that they contain high fructose corn syrup in the ingredients and would hope that Kellogg’s would fade that out of their cereal line. As an Eating Coach, I am always pushing to add more fiber to the diet, preferably through fruits and veggies and whole grains but as a huge cereal lover these All-Bran Cereals are a pretty good choice.
I first tried out the All Bran Bran Buds sprinkled on top of my Greek Grape Bran Bowl. These are fantastic on top of yogurt for that extra crunch and added fiber.
Greek Grape Bran Bowl
3/4 cup Fage 0% Greek Yogurt
1 cup sliced grapes
1/3 cup All -Bran Bran Buds (contains 51% of your daily fiber needs)
1 tbsp sliced almonds
(this was lunch yesterday)
For breakfast today, I had the All-Bran Original Cereal (twigs) with sliced banana, almonds and Silk Almond Milk. This was actually super tasty and brought me back to my Weight Watcher days when I used to either have All-Bran or Fiber One for breakfast each day.
This afternoon my daughter had the All-Bran Flakes and loved them! I had a bite and thought they were good too. I think she inherited the love of cereal from me and that is her favorite “snack.”
Now, of course you probably already knew I was going to have to make dessert with all this All-Bran Cereal and one of my all-time favorite cookies (that the whole family loves) are Hermits.
1 pkg Semi-Sweet Chocolate Chips
1 tbsp Almond Butter
3 cups All-Bran Cereal
Melt the chocolate chips in the microwave for 60 seconds or until chips are melted. Add the almond butter and stir until smooth. Add the All-Bran Cereal and drop by spoonfuls onto a cookie sheet that has been covered with parchment paper. Put them in the refrigerator to harden and then enjoy!
Simple and Delicious
and loaded with FIBER!
