Tigernut Flour Chocolate Chips Cookies
TIGERNUT FLOUR CHOCOLATE CHIP COOKIE RECIPE
{gluten free, dairy free, vegan and paleo}
Makes 8 cookies
- 3 tbsps water
- 1 tbsp ground flax
- 1/2 cup sunflower seed butter
- 1/2 cup Tigernut Flour
- 1/2 cup coconut palm sugar
- 1 tsp baking powder
- 1 tsp pure vanilla extract
- 1/2 cup dairy free chocolate chips
- dash of sea salt
Directions:
Preheat oven to 350 degrees. Make FLAX EGG by add 3 tbsp of water to 1 tbsp of ground flax in a small bowl. Place in the refrigerator for 10 minutes. In the meantime, mix together in a medium sized bowl, Tigernut Flour, sunflower seed butter, coconut palm sugar baking powder, and vanilla. Add flax egg and mix together. Once dough is formed, fold in chocolate chips. I had to mix with my hands. Form into cookies and place them on parchment paper lined cookie sheet. Bake 10-15 minutes until golden brown. Top with sea salt and let cool for 5 minutes. ENJOY!
These cookies are the BOMB! The whole family LOVED these.
